I'm sorry the only way to completely lift all the colours in your hair is bleach,

dark hair has all the color 'layers' in it and to get blonde/ white you will need to bleach it, which can be harmful to your hair and if done wrong yourself. Lighter hair had fewer 'layers' and so is easy to dye , for example if you wanted color like pink on black hair you would have to bleach it all and then put the color on.
your hair won't change colour unless you dye it, because your hair is dark and you want it light you'd probably have to bleach it first, then dye it white, or you could just leave it bleached. To get it back to black you could either dye it black or wait for it to grow out. It's not natural and can damage your hair, but i'm pretty sure it's the only way (:
Here's a video on some 100% natural ways to colour hair and to your question, yes you can colour hair from white to black naturally, it's in the video. I don't know about black to white so it's not in the video, however you can colour hair from black to grayish/silver colour.
